Who doesn't like to go to MC Donald, Burger king and ordering a meal having French fries,I used to wonder several times these french fries are just made from Potatoes and are really costly because potatoes are very cheap at our place.So one day I planned to surprise my husband by preparing Chicken burger with french fries and his favorite Iced tea. And I just went out to do grocery for my house ,when I was buying potatoes I become little confused which variety of potato should I buy,then a lady next to me suggests me to buy Russet potatoes ( potatoes having less starch ) as they have less moisture inside.Waxy potatoes will actually hollow out when you fry them, because they have more water in them and the water evaporates while they cook.

Tips before making French Fries
  • Always use potatoes having less starch.
  • once potatoes are cut for French Fries transfer them to a bowl of cold water aand sprinkle 1 tbsp of lemon juice.
  • Oil should be hot enough otherwise French fries will absorb more oil.
Method For preparing French Fries:
  1. Peel the potatoes, and the outer layer with the help of peeler..
  2. Square off the potato with knife and slice into 1/4 inch slabs.Now cut them into strips.
  3. The fries should be 3-31/2 inches long.Transfer them to cold water immediately otherwise     they will turned black.When the fries are cut, rinse them under cold water into the bowl until the water turns clear. The idea is to rinse off any excess starch.
  4. Add 1 tbsp of lemon juice,transfer to the fridge for about 30 minutes. We chill the potatoes because we want to keep the outside of the french fries from getting too brown too quickly. Chilling them helps the inside of the French fries cook all the way through before the outsides get too dark.
  5. Now in a pan heat oil .we have to cook French Fries twice ,first at low temperature so that  the inside of the potato cooked well and second time at high temperature when French fries turned brown and crispy.
  6. The fries from refrigerator when taken out should be kept on kitchen towel to dry them because adding wet potatoes in oil may splutter and can cause injury.
  7. First, heat the oil over medium-low heat . Cook the potatoes in the oil for 6 to 8 minutes, or until they're soft and they've taken on a slightly golden color.
  8. Remove the fries from the oil using a spider spoon and transfer them to the kitchen towel to drain. You can refrigerate them again until you're ready to use them, or at the very least let them stand at room temperature for 15 minutes. Remember to turn off the heat under the oil during this time.
  9. Now heat the oil to medium. Return the fries to the oil and cook for another 2 to 3 minutes or until the fries are golden brown and crispy. Drain on clean paper, then add salt generously and serve right away.

Sprinkle some black pepper powder over your French Fries ,it will add to your taste.
