Rajma is pretty famous particularly in Punjabi cuisine. Everybody is at our home is also addicted to Rajma even though we are not Punjabi. Whenever my husband is on leave he always demand for Rajma Masala,on his every week off I have to fulfill his demands sometimes chole bhature ,malai kofta and most of the time Rajma Masala.
The best accompaniments to Rajma is steamed basmati rice and the next comes some hot naan or rotis. Rajma Masala can be cooked by many ways,here I am sharing restaurant style recipe with step by step detailed method.Hope it will work for all of you.
Tips before making Rajma Masala :
- Soak the Rajma or kidney beans overnight or for 8-9 hours.
- the kidney beans have to be cooked very well while making Rajma Masala.
- Always buy Rajma / kidney beans which are not too old.
- You can also use kasturi methi at the end ,just crushed little before adding to rajma.
- If adding kasturi methi dont add coriander leaves and cream
INGREDIENTS :
- Soaked kidney beans : 2 cups
- Ginger - Garlic Paste : 1 tbsp
- Bay leaf : 2
- Black cardamom : 3
- Green cardamom : 5-7
- Finely chopped onion : 1 cup
- Finely chopped tomato :1 cup
- All ground spice : 1 tbsp
- Red chilli powder : 1 tbsp
- Turmeric powder : 1 tbsp
- Coriander powder : 1 tbsp
- Tomato puree : 2- 3 tbsp
- Cumin powder : 1/2 tbsp
- Oil : 3-4 tbsp
- Salt : to taste
- water as required
For Garnish : Coriander leaves and cream (optional )
METHOD FOR MAKING RAJMA MASALA:
- Heat oil in the pan ,add ginger- garlic paste,bay leaf, black cardamom,green cardamom and fry for few few seconds till ginger-garlic paste smell goes away.

2. Add finely chopped onions till they turned to slightly brown color.
3. Then add finely chopped tomato and cook till tomatoes are well cooked and the oil separates from the onion-tomato mix.
4.Add salt ,all ground spices,red chilli powder,turmeric powder,coriander powder and saute for 1 minute ,if masala is sticking at the bottom then add 2 tbsp of water ,stir for few seconds.

5. Add tomato puree and mix well for 5 minutes,cover the pan meanwhile.

6.Open the lid and add your kidney beans or soaked rajma in the pan ,mix rajma well with the masala for 2-4 min.

7.Add water (if you want to have thick gravy add less water ) and cumin powder in your rajma.

8.Mix and cook it well.

9.Garnish the prepared dish with coriander leaves and butter / cream .
