- 1 cup Ragi flour
- 1/2 cup refined flour
- 1 tsp baking powder
- 1 tsp baking soda
- 4 tbsp pumpkin puree
- 1 tbsp white butter
- 1 tbsp olive oil
- 3 tbsp curd
- 2 tbsp white chocolate chips
- 2 tbsp dark chocolate chopped
- 3 tbsp castor sugar
- 2 tbsp cocoa powder
- Salt
For butter milk
- 3 tbsp curd
- Water
For Pumpkin Glaze
- 1 tbsp pumpkin puree
- 1 tbsp castor sugar
- 1 tbsp white butter
- 2 tbsp white chocolate chips
- 1 tbsp white vinegar
- Salt
Recipe for Ragi Pumpkin Cake
- In a bowl, add ragi flour,refined flour,baking soda and baking powder and mix them together.
- Then add pumpkin puree in the flour and mix them gently with a spoon.
- Add white butter,olive oil and curd in the flour and again mix them together.
- Next step is to add white chocolate chips,chopped dark chocolate ,castor sugar,cocoa powder and salt in the flour and mix them.
- In a small bowl add 3 tbsp curd and water ,mix and make buttermilk.Add to the flour,mix and make a batter.
- Grease a loaf tin with olive oil,dust with ragi flour.Pour the batter into the tin.
- Sprinkle white and dark chocolate chips,castor sugar and ragi flour.
- Bake in a preheated oven for 35 min at 170 Celsius.
- Heat a pan add 1 tbsp pumpkin puree,1 tbsp castor sugar,1 tbsp white butter,2 tbsp white chocolate chips,1 tbsp white vinegar,salt and mix well to form a pumpkin glaze.
- Garnish the cake with pumpkin glaze.
- Pour the pumpkin glaze on the cake and serve.
