Baby Corn is very nutritious and healthy vegetable which is very good for health.Usually I cook this vegetable twice in a month as my hubby is not so fond of this Baby Corn,But he himself asked me yesterday to make Baby Corn Masala Curry after one of his nutrition friend told him about its benefits,this can be made in many ways but I prefer to make Baby Corn in masala curry.This tastes different from your regular veggies as it is little crunchy and somewhere little or mild sweet in taste.Before starting with my recipe some Baby Corn benefits.

Step to Step directions to make Baby Corn Masala Curry:

Ingredients used in making Baby Corn Masala Curry:
  • 250 gm Baby corn
  • 2 medium sized onions
  • 2 large tomatoes
  • 1 inch ginger
  • 5-6 cloves of garlic
  • 2-3 green chillies
  • 1 tbsp fresh cream
Spices used -
1 tbsp coriander / dhaniya powder 
1 tbsp cumin seeds /jeera
1/2 tbsp turmeric / haldi powder
1 tbsp garam masala
1/2 tbsp crushed kasturi methi / dry fenugreek leaves
salt to taste
3 tbsp oil

How to make Baby Corn Masala Curry :
  1. Rinse the baby corn first and then boil it in a pressure cooker for 2 whistles,once it cooled down chop them in 1 inch slice.

  2. Boil the onions ,tomatoes, ginger and garlic together for 4-5 mins and after cooling down,grind these in a grinder with little water and green chillies.

  3. In a pan heat oil,and add jeera / cumin seeds,dhaniya/coriander powder and haldi /turmeric.(can add red chilli powder also ,I skip because we don't like much spicy ).

  4. After adding spices its time to add onion tomato paste in it.Let the gravy cook on low flame,after oil is seperated from the gravy (you will watch oil on the top of the gravy which means gravy is cooked).

  5. After gravy is cooked add boiled baby corn in its gravy.Now add salt in it ,bring to a boil and then simmer for 8-10 mins on a low to medium flame till the gravy thickens and you get a medium consistency gravy.

  6. Now add crushed kasturi methi (dry fenugreek leaves ) in your baby corn masala curry.

  7. Its time to add fresh cream in your baby corn masala curry to give a nice creamy texture.Keep stirring until cream gets mixed in the gravy.

  8. Lastly add garam masala powder in your Baby Corn Masala Curry,stir and switch off your gas stove flame.

Notes:
1.Always try to use fresh baby corn.
2.Don't discard the water in which bay corn is boiled ,this water you can add if your gravy is thick in consistency.
3.If want more spicy then add green chillies instead of red chilli powder,
4.Boiling onion and tomato and then making their paste will make your curry more delicious.
