Allo Paratha Recipe |
One of the recipe every breakfast table has in north India is aloo paratha,not only in breakfast but sometimes served in lunch as well for dinner. Aloo paratha really goes well with curd,tomato chutney or ketchup and pickle.
This paratha is stuffed with the aloo filling ,this filling can be made as per your taste,it can be made spicy by adding more chillies or if you like less spicy then add less.This paratha is very easy to make and is stomach filling food.Here I am sharing you step to step recipe of aloo paratha .If you want to pack this for lunch than just do it because it stays softer even after hours.
This paratha can be made in oil,butter or desi ghee.I mostly cook this in desi ghee as it is more nutritious but again it all depends on your choice.Taste of your parathas do change with oil ,butter or desi ghee.
So lets just begin to make tasty and delicious aloo paratha.
INGREDIENTS
For aloo or potato filling
3-4 boiled potatoes,well mashed
1-2 green chopped chillies
1 tbsp coriander powder
1 inch ginger,grated
1/2 tbsp red chilli powder
2 tbsp finely chopped coriander leaves
salt to taste
oil/butter/desi ghee for roasting parathas
For making whole wheat dough
2 cups whole wheat
salt
1 tbsp oil
water as required for kneading
STEP BY STEP recipe of aloo paratha:
preparing the aloo mixture
1. first boil the potatoes.one it is cooled peel them.
2. mash the boil potatoes properly leaving no lumps.
3. now add chopped chillies, red chilly powder,coriander powder,salt,coriander leaves,grated ginger and salt to the mashed potatoes.
4.Now its time to knead dough for aloo paratha.In a bowl take 2 cups of wheat flour and make a small space between the flour to add salt,oil and water.
5. knead the flour into smooth dough,cover and keep aside the dough for atleast 20 minutes.
6. Its time to roll paratha,take a small portion from the dough,flatten them and dust with some flour.
7. with the rolling pin ,roll them into about 3-4 diameter inch round.
8. Place the potato mixture in the centre of the dough rolled in step 7.
9. Now fold the dough with filling and press the seal with gentle hands , it should be take care that dough is sealed properly otherwise the filling will come out and it might create difficulty in rolling the paratha,
10. Roll the paratha on the rolling pin with soft hands,press each corner gently to make the thin layer.
11. Now on a hot tawa place the rolled paratha,remember that the tawa should be hot otherwise the parathas will become hardened if on low flame.when the base is slightly cooked or brown patches are begin to form just turn to other side.
12. spread some ghee or oil on the paratha. when one side will puff up then turn the side and spread some ghee or oil on the paratha.
13. Just keep checking that the paratha edges are cooked well ,then place the paratha on a paper napkin so that excess oil will be out.This way make all the parathas and make loved ones happy.
Serve the parathas with butter,curd and pickle .I also served tomato chutney with the aloo parathas.
