How to Make Coconut Rice / Nariyal Rice
Coconut rice is a south indian recipe, there people really enjoy eating coconut rice with veg stew and even with just plain rice.Coconut rice is prepared on different festivals like pongal as a prasad. Last summer one day I was sitting idle and just wondering what to cook for myself as I was feeling very tired and didn't have energy to cook for myself standing long in the kitchen.I turned on the TV as I was alone and all of a sudden I switched on a channel where the cook was preparing nariyal rice,I really got tempted with the recipe so I decided to make it right away.This recipe totally belongs to the cook Gurdeep , I was really impressed by her idea of plating the dish .Lets start with the recipe.

How to Make Coconut Rice / Nariyal Rice
INGREDIENTS :
Ghee -1 tbsp
Cashew nuts - 4 to 5 nos
raisins - 8 to 10 nos
jaggery - 1 tbsp
slice tender coconut flesh - 1 cup
soaked rice - 1 cup
coconut milk - 1cup
water - as required
dried grated coconut
roasted curry leaves
green chillies
cashew nuts
raisins
meThOd
1. Soak rice in water for 30 minutes.
2..heat ghee in a pan ,add cashews nuts and raisins fry for some seconds.
3. add jaggery and let it melt ,then add slice tender coconut flesh ( malai inside coconut ) ,saute for few seconds.
4. Add soaked rice taking all the water out in the pan and mix them in ghee for 1 minute to get nice flavor.
5.Cook these rice in coconut milk and little water.
6. All the liquid should cover rice and then give a gentle stir.
7. Cover the pan with lid for about 10 minutes.
7. after 10 minutes check the rice if they are not cooked then cover the lid again for few more minutes.
8. once rice are cooked ,plate the dish in a coconut shell to give it a nice look.
9.Garnish Coconut rice /nariyal rice with dried coconut ,roasted curry leaves, green chillies,and raisins.
Suggestion:
Green chilly will compliment the jaggery sweetness.
plating the dish in coconut shell will give nice look ,not only the dish will taste nice but you will be appreciated for the presentation of the dish too.
