HOW TO MAKE CHAPATIS ,ROTI OR PHULKA
To make your chapati soft you will need to prepare the dough accordingly.All depends on dough if your dough is kneaded well that you will definitely get a soft and fluffy chapati.I know it will take time to make everything perfect but as it says nothing is impossible.Before I start with making Chapatis lets learn how to prepare dough for Chapatis.
- Wheat flour- 250 grams (2 cup)
- Water -1 cup
- Salt – 1/2 tsp
- Oil – 1-2 tsp
Filter flour and keep it in a deep plate or big bowl. Add salt and oil to flour.
Pour warm water to the flour and knead it gently. Do not pour too much water at once, mix flour properly. Press the dough and turn it over several times ,the dough shouldn’t be knead hard or very thin. When the dough seems same throughout, knead it and if needed sprinkle 2-3 tsp water on it, then cover and keep aside for 20 minutes . The dough is ready to prepare Chapati.

How to make Chapati
Step 1 Turn on the gas stove and in the meanwhile take out lemon sized portion from the dough and make a round ball using your palms in the hand.
Step 2 Sprinkle some flour on the ball and put it on the rolling board

Step 3 With the help of rolling pin put some pressure on the ball and then with the soft hands try to move your hands in circular motion.But make sure you use your hands without any force otherwise you will not get the desired consistency.

Step 4 Place the Chapati on the hot tawa and once it lower layer is slightly cooked turn to other side till you will see some brown patches.You can cook chapati directly on tawa or on the gas flame.
To cook Chapati on a Tawa, turn it over when spots appear on the other side. Now use a cloth or ladle to press it over the Chapati and cook.

To cook on the gas remove the Chapati from the Tawa. Place its first side marked with patches on the gas directly and move it around using tongs.

Cook Chapati till dark patches are visible. Don’t cook it too much otherwise it will turn black. Hold the Chapati and move it around with a pair of tongs till brown spots are seen. Chapati will turn puffy. Never catch a puffed Chapati with your hand, the steam coming from it may burn your hand.

Don’t get disheartened if you not get the desired shape and fluffiness,with practice you can make Round and fluffy chapati.Pour some ghee on your chapatis when it is hot and if you want to store it for later use spread a towel inside a hot pack & stack the chapathis one above the other.Close it with napkin & store it.

Serve the Chapatis with Dal or any other dish.
Few tips for making Chapati
1.Use warm water to knead the dough. This makes the dough more soft as well as the roti.
2.after kneading the dough, you can keep it aside for an hour or so and that will also help the chapati to become soft.
3.do add ghee/oil in the dough. adding ghee or salt makes the Chapati soft. You can skip adding ghee or oil. this is the basic method of making a whole wheat flour dough. The dough prepared can be used to make different parathas also.
4.The leftover dough if kept in fridge can be used for 1-2 days.But it is advisable to use fresh kneaded dough to prepare chapati.
