Mango Cheesecake Recipe
Ingredients for Mango Cheesecake
For the Bottom Layer
- digestive biscuits 300g
- salted butter 110g (melted)
- 1/4 tbsp cinnamon powder
For middle cream cheese filling and top layer:
- double cream 3/4 cup
- white chocolate 225g
- Plain cream cheese 300g
- lemon juice 2 tbsp
- gelatin 1 tbsp
- water 1/4 cup
- mango ripe 1 & 1/2 cup ( diced)
- mango pulp 3tbsp
- Vanilla essence- 1tbsp
- 3/4 sugar or add as required depending on the sweetness of the mangoes.
Directions for Mango Cheesecake
- Crush the biscuits and add melted butter in it, mix both together with soft hands.
- Melt the white chocolate in a double boiler.
- In a bowl add the cream and beat till stiff peaks form.
- Now add plain cream cheese in the double cream and mix together gently.
- Add the melted chocolate in the above mentioned cream and beat again.
- Now its time for the mango pulp, lemon juice to be added with the melted chocolate in the cream.Mix the mango pulp nicely so that it get mixed in even manner.
- Mix gelatin and water, leave for a few minutes to get it thick, then microwave it for 15 seconds to melt.
- Add the 2 tbsp of prepared mango batter in the melted gelatine and mix quickly, as it sets very fast once melted.
- Now add whole gelatin mixture in the batter and mix well.
- Place the diced mango on the top of the batter and slowly mix it.
- Pour the batter in the baking cake tin.
- With the help of a spoon add the mango pulp, swirl the pulp with a tooth pick.
- Cover and keep in the refrigerator for the mango cheesecake to set for 4 to 5 hours..
- Unmould the cake carefully ,use a butter knife to go around the edges to release the cake, open the spring form pan.
- Decorate with whipped cream ,chopped mangoes,mint leaves or with anything you prefer
- Slice the mango cheesecake and serve immediately.
