How to make Puff Pastry at home

Puff Pastry Dough
Ingredients needed for Puff Pastry Dough :
- Water 100 ml
- Plain flour 220g , plus some flour for dusting
- Unsalted butter
- Salt 1/2 tsp
- Lemon juice 3 to 4 drops
- Butter 180g
- Extra flour to dust the surface and mix the 180g butter
- Plastic wrap
Method to make Puff Pastry dough :
- In a bowl add flour, melted butter, lemon juice, salt and water ,mix everything together to make the dough, then on the working surface knead it again for a minute or two, then cover the dough with plastic wrap and keep in the refrigerator for 15 min.
- In another bowl add the butter and sprinkle 1 tbsp of flour ,break the butter with a rolling pin, add 1 more tbsp of flour to give square shape to the butter, cover it and keep the butter also in the refrigerator for 15 minutes.
- After 15 minutes, take the dough and butter out from the refrigerator.
- Dust the working surface with flour and place the dough on it ,roll the side or edge of the dough and make a star shape and a lump will be formed in the centre.
- place the butter in the middle of the dough and fold the sides so that the butter is covered properly.
- With the rolling pin press the dough gently so that the butter inside will spreads evenly, then roll it in a rectanglular shape(do not press hard on the dough as the butter may come out)
- Now fold the dough and cover it with the plastic sheet and refrigerate for 15 mins.
- After 15 mins again repeat the same procedure of pressing the dough with the rolling pin to make rectanglular shape, fold again and after covering the dough with plastic sheet refrigerate for 15 mins(do not forget to dust the working surface every time you roll the puff pastry)
- Repeat this again twice and your puff pastry is ready to use.
